Broiled Salmon Burger

This salmon burger has a nice fresh taste that comes from the lemon zest, scallions, garlic and wasabi. Give this recipe a try if you want a beautiful caramelized salmon that's crispy outside, then soft and moist inside that's super easy to make and bake!!

Ingredients

  • 1 lb fresh salmon fillet diced, small
  • 1 Tbsp garlic minced
  • ½ Tbsp lemon zest grated
  • ½ Tbsp wasabi paste or horseraddish
  • ¼ tsp black pepper
  • 1 pinch white pepper
  • 1 egg, large
  • 1 tsp salt
  • 3 Tbsp yellow corn meal
  • 1 Tbsp mirin
  • 3 Tbsp arrowroot flour

Optional Pairing ingredients

  • hamburger buns
  • Yogurt dill dip
  • Salad Mix kit
  • fresh lemon wedges

Instructions

  • Into a mixing bowl, combine all the ingredients except for salmon and arrowroot powder. Stir gently with spoon until incorporated. Set aside.
  • Place the oven rack closer to the top, about 6" away from the heat source. Preheat oven, broil on high.
  • Chop salmon into tiny cubes and add to the mixing bowl. Mix until fish is coated well. Add arrowroot powder at end. Depending on the size of the egg, may use 2~3Tbsp of arrowroot powder.
  • Unto a greased cookie sheet, drop ⅓ cup of patty at a time. Flattening as you go, making it about 1/2" thick rounds.
  • Broil for for 6-7min without turning, until browned on top and opaque throughout. Makes 8 patties.
