Ingredients
4slicesmilk bread
¾cupshredded cabbage
½small carrot, shredded
2-4slicessliced ham chopped
2eggs, large
1-2sliceColby jack cheese
1pinchsalt & pepper
½-1tspsugar
ketchup
Kewpie mayo
Instructions
Prep your bread slices. You can toast them on a toaster or lightly toast the bread with butter on a skillet until golden brown. Set aside.
In a medium size bowl, whisk the eggs, salt and black pepper. Using a handheld shredder, shred cabbage and carrot directly into the egg mixture. Lastly add the chopped ham into the bowl. Then give it a good mix.
Heat up a large pan. Add neutral oil and pour egg mixture. Cook in medium heat until the egg is fully cooked, but veggies are still somewhat crunchy. Lay a slice of cheese then fold the omelette in half. Try to create a square shape omelette while cooking, using the edge of a spatula. Set the cooked omelette aside.
On a cutting board, lay out all the prepared ingredients. Assemble the sandwiches, then add sugar and condiments. Slice in half before serving. Best eaten hot and fresh!
To pack the sandwiches to go, wrap them in piece of parchment paper or aluminum foil.
