Ingredients
1cupalmond flour
¾cuparrowroot flour
½tspcinnamon powder
½tspbaking soda
¼tspsea salt, fine
2tspmatcha powder, ceramonial grade
1largeeggroom temp
1tspvanilla
⅔cupdark brown sugar
1Tbsporganic coconut oil
optional topping
1Tbspraw cane sugar
½tspcinnamon powder
Instructions
Preheat oven to 350 degrees F. Grease cookie sheet and set aside.
In a large bowl, combine egg, vanilaa, brown sugar and coconut oil. Mix well and set aside.
In a small bowl, sift all the dry ingredients except matcha powder. whisk and set aside.
Combine dry into wet bowl and gently fold until well combined. Add matcha powder last and mix until well incorporated.
Separate into 11 balls. Dip into topping and lay on the cookie sheet. Press down with palm a bit to create 1" thick circles.
Bake for 12min. Cool 2-3min before removing from pan.
