Chewy Matcha Snickerdoodles
Craving some chewy cookies?? Then how about some chewy matcha snickerdoodles! These have the perfect chewy texture in every bite with hints of earthy flavor that comes from matcha!! These gluten free cookies are also easy to make and taste super yummy without being overly sweet!!

Ingredients
- 1 cup almond flour
- ¾ cup arrowroot flour
- ½ tsp cinnamon powder
- ½ tsp baking soda
- ¼ tsp sea salt, fine
- 2 tsp matcha powder, ceramonial grade
- 1 large egg room temp
- 1 tsp vanilla
- ⅔ cup dark brown sugar
- 1 Tbsp organic coconut oil
optional topping
- 1 Tbsp raw cane sugar
- ½ tsp cinnamon powder
Instructions
- Preheat oven to 350 degrees F. Grease cookie sheet and set aside.
- In a large bowl, combine egg, vanilaa, brown sugar and coconut oil. Mix well and set aside.
- In a small bowl, sift all the dry ingredients except matcha powder. whisk and set aside.
- Combine dry into wet bowl and gently fold until well combined. Add matcha powder last and mix until well incorporated.
- Separate into 11 balls. Dip into topping and lay on the cookie sheet. Press down with palm a bit to create 1" thick circles.
- Bake for 12min. Cool 2-3min before removing from pan.
