Korean Street Toast, also known as Gigeori Toast, is a perfect breakfast option or a quick bite to go! Enjoy this hearty and delicious street food at home!

The Korean Street vendors make the best breakfast sandwiches, hands down! What’s surprising is that each vendor has their own unique way of making their Gilgeori toast! No wonder the regulars line up at their favorite vendor! I am not a huge sandwich lover, but I do love Korean Street Sandwiches!!
What does Korean Street Toast taste like?
First thing first is the bread. Koreans typically use milk bread slices, that’s been toasted on the skillet with butter until golden brown. Inside the sandwich, there is usually an egg omelette, ham, and cheese. You can add different types of veggies into the egg mixture, but the typical veggies used are cabbages and carrots. If you like extra crunchy texture, you can also add other veggies into the omelette like sliced onion and chopped green onion.
Koreans also love adding American cheese in the center. Once everything has been cooked to liking, assemble the sandwich and add condiments. The typical condiments are white sugar, ketchup and mayo. You may say it’s an unusual condiment combination, but it actually works!
If you want some spicy kick, you can also add Siracha sauce with mayo as condiments.
What ingredients do I need for Korean Street Toast?
- slices of bread: I used milk bread in mine, but you can use plain white bread. I toasted my bread in the toaster for convenience.
- sliced ham
- shredded cabbage: You can use green cabbage or purple cabbage
- shredded carrot
- slice of cheese: You can use any type. American Cheese, cheddar cheese, Coby Jack.
- eggs to make egg omelette
- pinch of salt and pepper
- sugar
- ketchup
- mayo: I used Kewpie Mayo
How do you make Gilgeori Toast?
- Prep your bread slices. You can toast them on a toaster or lightly toast the bread with butter on a skillet until golden brown. Set aside.
- In a medium size bowl, whisk the eggs, salt and black pepper. Using a handheld shredder, shred cabbage and carrot directly into the egg mixture. Lastly add the chopped ham into the bowl. Then give it a good mix. Pro tip: You don’t want to make them too fine, otherwise you will lose that crunch. You can also julienne the vegetables instead if you like extra crunchy texture.
- Heat up a large pan. Add neutral oil and pour egg mixture. Cook in medium heat until the egg is fully cooked, but veggies are still somewhat crunchy. Lay a slice of cheese then fold the omelette in half. Try to create a square shape omelette while cooking, using the edge of a spatula. Set the cooked omelette aside. Warm up the ham slices on the pan if needed.
- On a cutting board, lay out all the prepared ingredients. Assemble the sandwiches then add sugar and condiments, like ketchup, mayo, siracha etc. Slice in half before serving. Best eaten hot and fresh!
- To pack the sandwiches to go, wrap them in piece of parchment paper or aluminum foil.
