    Feeling like you need a small meal but don’t want to cook up a storm? How about a Korean egg salad sandwich instead? This quick and easy recipe will surprise you with flavors and textures that are right on point! Don’t underestimate the power of egg salad sandwiches, they can be quite tasty!!

    what is a korean egg salad sandwich?

    Korean egg sandwich is typically made of hard boiled eggs, mayo, condiments and sometimes addition of veggies. Its slightly on the sweeter side than the American version. The texture can vary from very creamy to very chunky depending on one’s preference. Many coffee shops in Korea serve egg salad sandwiches, which are most likely sandwiched between milk bread slices. These sandwiches are great as breakfast, brunch or as a small meal.

    This recipes turns everyday egg salad sandwich into a gourmet style flavor in minutes! The secret is all in the seasonings!! This one also has some crunch from the cucumber giving it a nice balance of texture! Be sure to try this nutritious sandwich with hints of sweetness, savory and bit of crunch! Simple and delicious! Pair it with the brioche bread for that tasty egg salad sandwich!

    Can i use different type of bread?

    Yes, you can use any type of bread but make sure they are not toasted and more on the softer side. Hence milk bread or brioche bread would work out the best.

    how long will these sandwiches last?

    Egg Salad Sandwiches are best to be eaten right away since the filling is quite wet and creamy. If untouched, you can store in an air tight container for one day. If you plan to pack this sandwich to go, there are 2 options. First, I suggest packing the filling separately from the bread. Second, I suggest layering lettuce leaves between the bread and the filling on top and bottom. The lettuce will act as a buffer to prevent the bread from becoming soggy.

    what can i pair this sandwich with?

    It’s personal preference, but you can pair it with pretty much anything. I like to pair them with crunchy potato chips, french fries or something sour like pickles. I think apple slices or fresh corn on the cob would work really well too.

    any Addtional ingredients ideas for the filling?

    You can certainly modify the filling by adding some of your favorite ingredients. Here are some options. Just remember some of these have more water content that can water down the filling so be mindful of this when adding extra ingredients!

    • bacon bits
    • fresh apple cubes
    • blanched peas
    • blanched, diced carrots
    • diced ham
    • cooked & finely diced potatoes
    • chopped scallions

    how else can i enjoy this egg salad?

    You can also consume it with crackers and hot sauce, almost like a dip. I have done it before and it’s great as an appetizers or late night snack! You can also serve this as a side dish with your favorite Korean side dishes.

    Korean Egg Salad Sandwich

    Ingredients

    • 6 hard boiled eggs large size
    • 1 kirby or small korean cucumber
    • ½ tsp sea salt
    • 3 large brioche buns

    Mayo Sauce

    • ⅓~½ cup mayonnaise
    • ¼ tsp salt
    • ½ tsp sugar
    • 1 tsp honey
    • 1 pinch black pepper
    • 2 tsp dijon mustard
    • ½ Tbsp lemon juice

    optional ingredients

    • 1 pinch garlic powder
    • 1 pinch paprika

    Garnish

    • dehydrated parsley
    • paprika powder

    Instructions

    • Boil eggs, peel and set aside. Once cool separate the white part of egg from yellow. Chop white part and crush yellow, set aside.
    • Slice cucumber about 1/4" thick. Combine into a bowl and toss with 1/2 tsp sea salt. Let it sit for about 10min then squeeze excess water. Tap dry with paper towel then slice or dice. Set aside.
    • Make mayo sauce. Combine all ingredients into a bowl and mix well. Taste sauce and add more salt if needed. Add egg and cucumber that was set aside. Gently fold with mayo sauce. Cool in fridge for about 15-20 mins.
    • Prepare brioche bread and spread egg salad. Garnish with parsley and paprika. Serve immediately and store leftover in fridge.
