    Makgeolli Fried Chicken

    what is makgeolli?

    Makgeolli is a traditional Korean alcoholic beverage. It is typically made from rice, water and a fermentation starter called nuruk. This wine is milky white or off white in appearance and may resemble a starch water. It has a combination of sweet, tangy and bitter flavors. In the beginning the yeast like aroma will change to floral like scent signifying it’s readiness to consume. As time passes in the bottle, Makgeolli ferments even more, creating a stronger flavor.

    can you make it from home?

    It does not need to be pasteurized and can be made and consumed from home. However the shelf life may be limited. This traditional drink pairs very well with Korean cuisine and is great with heavy, greasy food. You can make your Makgeolli from home. I used this kit

    how is store bought different from homemade?

    Store bought Makgeollli needs to be pasteurized to extend it’s shelf life. The flavor in my opinion seemed a little flat. The homemade version has a nice deep natural flavor and you can control the added ingredients, but the downfall is that it needs to be consumed within 2 weeks.

    can you use store bought makgeolli for this recipe?

    Yes you can use the store bought Makgeolli. I have tried both ways, but I really enjoyed the fried chicken with the homemade Makgeolli. You just have to give a try to see the difference.

    Makgeolli Fried Chicken

    Ingredients

    • 1 lb chicken thighs cut into chunks
    • 1 tsp sea salt
    • 1 tsp sugar
    • 1 tsp garlic powder
    • 1 pinch ginger powder
    • 3-4 Tbsp Makgeolli

    Dipping/Fry Batter

    • ½ cup all purpose flour
    • ½ cup potato starch
    • ½ tsp sea salt
    • ½ tsp sugar

    other ingredients

    • vegetable oil for frying

    Instructions

    • In a mixing bowl, combine batter ingredients, whisk and set aside.
    • In a big ziplock bag, combine chicken and rest of the ingredients. Massage chicken and set aside for 15-20min.
    • Heat oil in skillet. Once it's hot enough to make batter float in 3 seconds, it's ready. Meanwhile add half of the batter into ziplock bag and message into chicken. Then dip each chicken piece into leftover dry batter before dropping into hot oil.
    • Deep fry for about 6min or until golden and crispy.
    • Pair with sweet gochujang sauce and Makgeolli.
