Homemade chicken soup doesn’t have to look plain and mundane anymore! By adding some fun shaped rice cakes and veggies, you can easily create that one impressive looking soup bowl! Your fam will love it!
I love making homemade chicken stock, made from boiling a whole chicken with aromatics. They are so soothing and full of natural flavors; you just can’t compare to the store-bought ones. This is one dish I made using the homemade chicken stock as a base. Then used some fun rice cake shapes to make a festive, fun dish!! Easy, tasty and healthy one pot meal is what you will get from this!! Besides, who wouldn’t want to eat stars and hearts for dinner!!
where can i buy the rice cakes?
I found my assorted shaped rice cakes from HMart. If you can’t find these, you can easily use the regular oval, flat shaped rice cakes or cut up the cylindrical ones. My kids really enjoyed this dish since the shapes were so fun to watch and eat!
why do you soak the rice cakes?
I recommend soaking these rice cakes, since they are not the fresh made ones. You can tell by touching them, they are quite hard to touch from the bag. The fresh ones are very soft to touch and do not need to be soaked in water. I recommended soaking them for about 10-15 min in cold water, then drain them before adding them into the broth. This keeps them supple and washes away some starch coating.

Chicken Soup with Rice Cakes
- 4 cups chicken broth homemade preferably
- ½ cup shredded chicken
- 2 cups rice cakes 12 oz
- 1½ tsp sea salt
- ¼ cup onion sliced
- 1 medium carrot chopped
- 2 clove garlic bruised
- 1 pinch black pepper
- 2 Tbsp scallion chopped
- Soak rice cake in cold water for 10-15 min. Drain and set aside.
- Chop and prep all veggies.
- In a pot, add chickens stock, chicken, salt, onion, and carrot. Bring to boil. Then add rice cakes and boil for about 5min or until rice cake is tender. Stir often and don't cover with lid.
- Garnish with black pepper, scallion, and sesame seeds. Salt to taste.
