why this recipe works:
This is where Perogies meet Asian style; a delicious dumpling fusion that’s wholesome and finger licking good! You will be left with the most amazing Perogies; crispy exterior with chewy skin like Asian dumplings while soft & moist filling like perogies! Then dip them twice in the house sauce for that final touch! Trust me, these may be gone before you even serve them on the table!!

how do you make asian style perogies?
- Heat pan and add bacon. Stir fry and render fat for few minutes. Add onion, and garlic and cook until onion is transparent. Add chicken and stir fry for 30 seconds. Add pinch of salt and pepper. Remove from heat and set aside.
- In a shallow bowl, prepare mashed potatoes. Add salt and pepper and mix well. To this bowl, pour stir fried veggies and bacon. Mix well.
- Have a tray ready with a pile of dumpling wrappers and a small bowl with egg white. Hold one wrapper flat on one palm. You your other hand and wet around the wrapper edge with the egg wash. Fill the center with about 1Tbsp of filling. Fold the wrapper in half making half-moon shape. Press the edge firmly. Repeat to all wrappers until you are done filling. Yields about 26 perogies.
- Heat a skillet in medium high heat and add generous amount of oil. Pan fry each perogies for about 2-3min, flipping halfway until golden brown.
- Serve hot with dipping sauce.
why do you need to dice everthing?
- Makes it easier to combine the filling ingredients.
- Helpful when sealing the dumpling wrappers. If the ingredients are too big, closing the dumpling wrappers can become challenging.
what kind of wrapper shold i use?
For this particular perogies, I used a Korean brand, (see picture below). You can find them in the freezer section at your nearest Korean Market. To thaw, leave it in the fridge for about 1/2 the day. I enjoyed this brand because it seemed to have a much chewier texture than others.
Can I boil the chicken perogies instead?
Yes, you can certainly boil these as a healthy alternative. Once done, you can even pair them with your favorite pasta sauce and cheese sprinkles!
can you freeze the perogies?
Yes, these perogies freeze really well. You can freeze them up to a month.
