Ingredients
1cupmashed potatoesfirmly packed
2clovegarlicminced
½cuponiondiced
2stripsbacondiced
¾cuproasted chickendiced
½tspsea salt
⅛tspblack pepper
1medegg, white part only for wrapper sealing
5-6Tbspneutral oil
26-30pcsKorean Wonton Wrappers/Mandu Wrappersfrozen/thawed in fridge
Dipping Sauce
2TbspKorean Soy Sauce
2Tbspwater
2tspvinegar
½tspsugar
Instructions
Heat pan and add bacon. Stir fry and render fat for few minutes. Add onion, and garlic and cook until onion is transparent. Add chicken and stir fry for 30 seconds. Add pinch of salt and pepper. Remove from heat.
In a shallow bowl, prepare mashed potatoes. add salt and pepper and mix well. To this bowl, pour stir fried veggies and bacon. Mix well.
Have a tray ready with a pile of dumpling wrappers and a small bowl with egg white. For each dumpling wrapper, use your finger to wet around the edges with egg wash. Fill the center with about 1Tbsp of potato filling. Fold in half making half-moon shape, then press the edge firmly. Repeat until all fillings are used. Yields about 26 perogies.
Heat a skillet in medium heat and add generous amount of oil. Pan fry each perogies for about 2-3min, flipping halfway until golden brown.
